Piemonte Rosato D.O.C.
The grape harvest takes place from the end of August to the beginning of September. The vinification takes place with de-stemming and placing the grapes in the press. Maceration for 8 hours and soft pressing. (Yield of grapes into wine 50%).
Natural decantation of the juice and spontaneous fermentation. Natural clarification and bottling at the beginning of March to respect the fresh notes of the grapes.

Nizza is obtained from selected vines grown in a district of 18 neighboring municipalities in Nizza Monferrato, where the new DOCG is born.

Moscato d'Asti D.O.C.G.

The vinification begins with the pressing of the still intact grapes from which the must separated from the skins is obtained, ready to be introduced into tanks at a controlled temperature to proceed with the clarification and filtration process.
It is then decanted into autoclaves and stored at a low temperature where a slow fermentation phase begins which ends reaching an alcohol content of 5 degrees of alcohol by lowering the temperature and micro filtration.
